So many of you wanted this recipe posted, so here it is! This is a household favorite at the Battistessa home. These clean and easy to make healthy blueberry muffins are a perfect snack or warmed up for breakfast with some peanut butter.
I like to make two batches and freeze one for the boys to grab and go when they need a quick snack. You can warm them in in the microwave for 30 seconds and they will be delicious!
Fresh blueberries is all I use, never frozen!
The other thing that makes these so healthy is that I use honey to sweeten them and nothing more! It’s hard to believe just how delicious and satisfying they are.
Preheat your oven to 350 degrees. Grease a muffin tray or use muffin liners.
For 24 muffins
I mix dry ingredients first. I then add the wet ingredients and mix everything together.
2 cups of almond milk
2 cups of oat flour (you can blend your oats in a blender quick to make flour)
2 cups of whole wheat all purpose flour
1 teaspoon of baking soda
2 teaspoons of baking powder
1 teaspoon of cinnamon
1/2 teaspoon of salt
2 large eggs
1 cup of honey
2 teaspoons of vanilla extract
1/2 cup of applesauce
Mix it all together! and then fold in your last ingredient…
2 cups of fresh blueberries
Once blueberries are all folded in and the batter is ready to go, spoon batter to the top and bake for 20 minutes! You can store in airtight container for a few days (if they last that long) or freeze!
